Red Pepper Pasta

Ingredients:

  • 1/2 of One Red Onion
  • 2-3 Red Bell Peppers
  • 4 Cloves of Garlic
  • 1-2 tbs olive oil
  • 1-2 tsp of crushed red pepper flakes
    • Optional: I save an extra pinch to sprinkle on top at the end.2
  • 2 tsp dried basil
  • 1 cup of milk
  • Salt & pepper to taste
  • Pasta of your choice

Step 1: Preheat oven to 375 F.

Step 2: Cut red peppers and onions into 1/4 inch pieces (be sure to cut out core of the peppers).

Step 4: Line a baking tray with foil. Place cut red peppers, onions, and 4 garlic cloves on tray.

Step 5: Pour oil and dry seasonings onto the peppers, onions, and garlic. Mix together until dry ingredients are evenly spread throughout the vegetables.

Step 6: Place into oven for 20-25 minutes or until the vegetables slightly blister or have a light char on it.

Step 7: While vegetables are roasting, bring 4 quarts of water to boil and add a pinch of salt. Once boiling, add in pasta and cool until “al dente.”

Step 9: After vegetables are done roasting, transfer them to your blender. Add 1 cup of milk and blend until everything is a nice “saucy” consistency.

Step 10: Pour sauce over pasta and enjoy!
