Ingredients:
- 1 cup milk or heavy cream
- 3 tablespoons of all purpose flour
- 3 tablespoons of butter for roux
- 2 tablespoons of butter for breadcrumb
- 1 cup shredded cheddar cheese
- ½ cup shredded white cheddar cheese
- ½ cup parmesan cheese
- You can add any other cheeses you enjoy!
- 16 oz of elbow macaroni
- ½ cup of crushed butter crackers
- 1 cup of bread crumbs
- Olive oil spray
Step 1: Before you begin, take your butter crackers and bread crumbs, and add to a blender. For 30 seconds, blend them together. If you don’t want to use a blender, you can crush them in a Ziplock bag with your hand. Leave them to the side.
Step 2: Preheat oven to 400 F.
Step 3: Boil 4-6 qts of water, add salt to taste.
Step 4: Once water is boiling, add pasta and stir occasionally for 7-8 minutes.
Step 5: While pasta is boiling, begin making roux.
Step 6: Heat a skillet pan on medium-low and add 3 tbs of butter to a hot pan, and let butter melt.
Step 7: Once butter is all melted, add 3 tbs of flour and whisk butter and flour together until you create a thick paste.
Step 8: Add 1 cup milk and whisk in until nice and smooth (roughly 1-2 minutes).
Step 9: Add salt & pepper to taste, combination of shredded cheeses and whisk in until smooth. Keep on very low heat and stir often while you begin Step 10.
Step 10: At this point, your pasta should be done. Drain pasta completely.
Step 11: Melt another 2 tablespoons of butter, and in a smaller dish, pour the butter over the crushed mixture of bread crumbs and butter crackers. Mix together. Leave on the side.
Step 12: Grab your baking dish and begin layering your baked mac and cheese. I like to add the pasta to the baking dish, add a small spoonful of roux on top, sprinkle parmesan cheese, and a very small handful of the crumbs, then repeat.
Step 13: Once all your layers are complete, pour the remaining roux over the entire dish.
Step 14: Take the breadcrumb/cracker and butter mixture and make a nice layer on top. Add handful cheese of your choices to the top as well.
Step 15: Grab a piece of foil and spray it with olive oil and then cover the baking dish.
Step 16: Bake for 30 minutes.
Step 17: Take off foil and then let bake for another 15 minutes or until nice and golden.
