Following the trend! This is an easy and quick recipe that doesn’t have any crazy/technical steps. I used Strawberry Jam or Jelly for this recipe, but you can use a fresh strawberry sauce for a fresher flavor. You can also swap out the strawberry flavor with any other fruit puree/pulp that you enjoy!
Serves 4-6
Ingredients
- 8oz Cream Cheese
- 8oz Whipped Cream Cheese
- 2-3 TBS of Confectioner’s Sugar (can add more if needed)
- 1/2 Cup Strawberry Jam (can add more if you enjoy the taste of fruit vs. the tartness of cream cheese)
- 4 TBS of melted butter
- 1/2 Cup of Crushed Graham Cracker for Crust
- Optional: whipped cream and chopped strawberries for topping.
Step 1: Crush graham crackers and pour into a medium sized bowl.
Step 2: Melt butter (quick tip: melting on low heat on the stove in a small saucepan always works better than the microwave!)
Step 3: Pour melted butter onto graham crackers and mix together.
Step 4: Take graham cracker mixture and spread at the bottom of the bowl you will be setting your cheesecake in (quick tip: using the bottom of a drinking glass, press down, so it forms an even layer). Leave to the side.
Step 5: Combine cream cheese, whipped cream cheese, powdered sugar, and strawberry jam into a bowl. Mix together using a hand-mixer until you get a nice “custardy,” light texture.
Step 6: Pour the cream cheese mixture over the layer of crusted graham crackers.
Step 7: Put in fridge and let it set for at least 4-6 hours (can leave overnight if desired).
Step 8: Once set, can top with whip cream and chopped strawberries.
